Ribbons of yellow squash and green zucchini (used my veggie peeler)
Sliced mini heirloom tomatoes of various colors (at Costco in the warmer months)
Red and orange pepper strips
Purple onion strips
Fresh cooked corn (I took the silks out, microwaved for 5 min)
Creamy goat cheese
Bag of mixed greens
Vinaigrette (I used one from Trader Joes)
Toss all ingredients in a large bowl. Devour!
