Ovenight No-Cook Steel Cut Oats

Ever since we got rid of our microwave, I have been looking for a good breakfast alternative for my husband and I.  We don’t eat much cereal anymore and my husband goes to work super early, so cooking something every morning is out of the question.  I tried a few recipes for overnight oats in the fridge, but couldn’t find a recipe that I really enjoyed.  We use steel cut oats and the texture was never right.

After several tries, I finally found a mix of ingredients that works!  I was determined not to replace our microwave and this seems to have done the trick.

Overnight Steel Cut Oats

Mix equal parts uncooked steel cut oats, whole milk Greek yogurt and almond milk.  Stir to combine and refrigerate overnight.  Mixture will thicken and you can add fresh fruit, granola, cinnamon or just eat as is.

You can use any type of yogurt you like, we just prefer the thicker texture of Greek yogurt.  You could even make your own yogurt!  Any type of milk would work as well, we are just trying to limit our dairy intake so almond milk works for us.  We like to crumble one of these Cinnamon Chip Protein Bars over the top each morning.

This has been such a great breakfast option for us, I can quickly make two servings every night while cleaning up the dinner dishes.  Just throw it in the fridge and my husband has an easy no-cook option each morning.

Try this – Crockpot Oatmeal
Note: If adding dried fruit, add at the end and cook for an addtl 30 min.
2 Cups Steel Cut Oats
8 Cups Lowfat milk or water (I use milk)
1 T vanila
1-2 cut up apples (your preference)
1-2t cinnamon
Dried fruit (I add some craisins at the very end)

Mix together in crockpot. Cook on low for 3 (3.5 hrs if adding the dried fruit) and Voila. You can serve with bananas or other addtl fruit. Reheats great too and enough for the rest of the week. My family eats this and enjoys it!

If you double or more the liquid, you can actually leave it to cook all night and have it hot in the morning. I don’t like oatmeal cooked with milk and this works with any combination of water or milk. It does takes a little experimentation to see how much water you might actually need to get your consistency but at least double. The same amount of oatmeal cooks up into hearty servings also.

This link talks about doing it with a smaller bowl in inside the crockpot so you don’t have the crust but I personally like the crust just fine :]

Hi! I put a batch in the fridge last night and let it ‘cook’ for about 11 hours overnight and it didn’t seem like the steel cut oats absorbed much of the liquid….any suggestions?

I’m not sure, mine always turned out perfectly in the morning. What kind of milk and yogurt did you use? Were you careful to use equal parts? Definitely used uncooked oats?
