Recipe from Bites: Quinoa Salad

This was the first recipe I made with quinoa and I’ve been a big fan since.  My favorite place to buy it is Costco but it comes in a rather large bag so I’d recommend finding a friend to split it with if you’ve never tried it out before.


1 c. Quinoa
2 c. veggie broth
1 can corn, drained
1 can black beans, rinsed and drained
1 bell pepper (red, yellow or orange), diced
1 large tomato, diced
1/2 bunch cilantro, minced
2 t. cumin
salt and pepper to taste
lots of lime juice (from about 6 limes)

Cook quinoa according to package directions, using broth instead of water. Combine cooled quinoa with the rest of the ingredients and serve!
