Recipe: Cowboy Caviar

Cowboy Caviar

We’re coming into the season of potlucks, Halloween parties, Monday night football, fall get-togethers and this is the recipe you need to have in your back pocket!  It will be a hit at ANY party! Be prepared for people to want the recipe.


Juice of one lime
1/4 cup red wine vinegar
1 Tbsp Tabasco
2 Tbsp vegetable oil
3 garlic cloves, minced
1/4 tsp pepper
3/4 tsp salt
3 large (or 4 small) firm avocados, chopped

1 can white beans
1 can black beans
1 can pinto beans
3 cups frozen corn (I defrosted mine a bit but you don’t have to)
1 cup sliced green onions
1 cup fresh cilantro, chopped
1 lb. cherry tomatoes, halved


Mix the first eight ingredients and let the avocados marinate for at least thirty minutes.

Combine the rest of the ingredients and then add the marinated avocados, gently mixing it all together.

Serve with tortilla chips!
