This is a new recipe for me that I have absolutely fallen in love with! I love how the peanut butter gets all melted and gooey and the coconut milk makes it super creamy.
1/2 cup dry quinoa, rinsed
1/2 cup light coconut milk (canned)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla
dash of salt
2 tablespoons peanut butter
1/2 and apple, diced (I microwaved my apple chunks with a small pat of butter for a minute just to soften them)
1 tablespoons pecans
Cook quinoa according to package directions (using water) but add in cinnamon, nutmeg, vanilla, and salt while cooking. Using a fork, fluff the the quinoa very gently.
Divide the quinoa amongst two bowls. Top with peanut butter, apples and pecans. Drizzle with coconut milk on top.
