The next product I chose to feature from Cellfire was a tough one to choose.  I wanted to choose something that I had used in a recipe, similar to my post on Bisquick.  Then I remembered these yummy cookies that I made a few months back when I had an overabundance of Honey Nut Cheerios in my pantry (after a spectacular sale, of course!).

These cookies were really yummy.  They are super crunchy and chocolatey (I kind of despise raisins, so of course, I used chocolate!)  As you know, if you have been couponing for even a short while, there are ALWAYS deals on cereal.  We eat a lot of cereal in our house, but sometimes it’s fun to find unique and different ways to use it.

1/2 cup butter, softened
1/2 cup smooth peanut butter
1 1/4 cups sugar
1/2 t. baking soda
1/4 t. salt
1/4 cup water
1 egg
1 T. vanilla
1 1/2 cups all-purpose flour
1 cup rolled oats
1 cup raisins or milk chocolate pieces
3 cups toasted oat cereal (such as Honey Nut Cheerios)

* Preheat oven to 375 degrees.  In large mixing bowl, beat butter and peanut butter with electric mixer on medium to high speed for 30 seconds.  Add sugar, baking soda and salt.  Beat until combined, scraping sides of bowl.  Beat in water, egg and vanilla until combined.  Beat in flour until combined.  Beat in as much of the rolled oats as you can with mixer.  Stir in any remaining oats, along with raisins and oat cereal.

* Drop dough by 1/4 cupfuls about 3 inches apart on an ungreased cookie sheet.  Flatten slightly.  Bake for 10 to 12 minutes or until edges are lightly browned.  Cool on cookie sheet for five minutes.  Transfer to a wire rack and let cool completely.  Store cookies in a tightly covered container for up to five days or freeze for up to 3 months.
