Cilantro: It’s what’s for dinner

Cilantro is one of those things that is all or nothing in my fridge.  I either don’t have it when I really want it or have WAY too much.  I ended up with two huge bunches this week and needed to get creative.

I asked all you TBFL faithful on Facebook recently to share your favorite methods of using it and you didn’t disappoint.  I decided to declare “National Cilantro Day” in the Hansen household and went crazy.  We had cilantro in our scrambled eggs, on our salad for lunch and for dinner it was everywhere.

We had Quinoa Patties with cilantro in place of onion and Cilantro Potatoes.  I thought about tossing our roasted carrots in cilantro as well, but thought that might be overkill.

By the way, I forgot how outrageously good roasted carrots are.  My 3-year old eats salad like it’s going out of style, but I have to be a little more creative with my almost 2-year old.  He likes vegetables, but not everything.  He definitely is a little pickier about the taste and texture, roasting was a huge hit for him.  It was a good reminder to mix things up a little bit for my kids.

Thank you for all your suggestions!  I really struggle with letting food go to waste so I turn to my readers, the ever faithful Google and of course, Pinterest.

I’d love to hear more cilantro suggestions.  I have a huge pot planted in the backyard, so will undoubtedly be in this spot again in the near future.
