Last time this deal came up, I split it with a friend and got six bags.  Six bags was a lot of coconut and it’s been fun to try new recipes with all the coconut in my pantry stock.  We’ve been adding it to granola, using it in our steel cut oats and doing lots of baking.

I woke up this morning to these Forgotten Cookies.  They are seriously the easiest thing I’ve ever made.  Three ingredients, no sugar and they take seconds to make.  My kids are going to think my “cookies” are awesome when I don’t care how many they eat! I modified the recipe just a bit because I didn’t have dates.  We are sugar-free right now so this was a great alternative to the cookies we are trying to avoid.

Forgotten Cookies

  • Just before bedtime, heat oven to 350 degrees
  • Beat 2 egg whites, stiff, fold in
  • 2/3 cup unsweetened coconut
  • 1/2 cup unsweetened raisins or 10 dates

Place 12 small dollops on greased cookie sheet or silicone baking sheet. Place cookies in pre-heated oven then turn oven off. Wake up to crispy-chewy cookies. Makes 12.  I suggest doubling or tripling or quadrupling.
