While we generally shop at Tropical Traditions for their AMAZING organic raw honey, they also have tons of other fantastic organic food options to choose from. We have tried their coconut flakes, coconut oil, pure maple syrup and more.  Now that we have gone almost completely grain-free in our house, we had to completely overhaul our pantry and our cooking and baking needs changed.  We had to find alternatives to flour, processed sugar and traditional sweeteners, which seemed like a bit of a challenge in the beginning.  Luckily, there are a million and one recipes out there that helped guide us in the right direction.

Tropical Traditions has been a fantastic source for high-quality, grain-free and delicious products.  We started using their Coconut Cream Concentrate (or coconut butter) to make our own coconut milk for cooking and baking.  I just melt a teaspoon or two and mix with water to create instant coconut milk.  So much cheaper than buying it by the can!

After awhile, we realized it had some other delicious uses as well.  It can be used as a creamy base for cookies or just eaten straight out of the jar with a spoon if you’re craving something sweet.

I struggle with an insatiable sweet tooth and instead of indulging in treats full of sugar, I seek out recipes like these Creamy Coconut Macaroons.  They are made with just Coconut Cream Concentrate, unsweetened shredded coconut, maple syrup and high quality chocolate.  They are denser and more satisfying and indulge my sweet tooth without going crazy.  I’ve tried giving up sweets altogether and it gets ugly.  UGLY.  This is my middle ground.

Sometimes when I feel a primal craving coming on and am about to dive into old Halloween candy, I whip up a quick batch and eat a few bites of the dough to curb the insanity.  It’s so amazing by itself that little hands can’t help themselves.
