While we generally shop at Tropical Traditions for their AMAZING organic raw honey, they also have tons of other fantastic organic food options to choose from.  We have tried their unsweetened shredded coconut, coconut oil, pure maple syrup and more.  One of the items I have been really wanting to try is their organic coconut flour.  We have cut out all grains from our diet, so baking can be a bit of a challenge.  Most Paleo recipes call for almond or coconut flour and we are trying to cut back a little on the amount of nuts we are eating, so this is a perfect option.

Baking with coconut flour can be a little tricky, since it is fairly lumpy and has a totally different moisture content than a traditional flour.  However, there are tons of recipes out there and cooks that have done the work for you figuring out how to make it work to produce some amazing goodies.  Compared to the few other coconut flours I have tried, this one from Tropical Traditions has been the easiest to work with as far as texture (read: minimal lumpiness).

Our Paleo Chocolate Chip Mug Cake uses coconut flour and is a perfect afternoon or evening treat.  Just toss all your ingredients in a mug, microwave and done.

I’m just learning to bake with coconut flour. I tried a banana bread a while ago that turned out horrible (I used to much coconut flour), but I’m gearing up to try something new. I’m thinking the paleo chocolate chip mug cake sounds pretty good.

Coconut flour is hands down my favorite flour. I like making mug cakes with it. My favorite is pumpkin spice with chocolate frosting. Sounds like a fall treat but I enjoy it all year long!

I have a recipe for oatmeal bars that calls for blueberries but we also make with strawberries. It is a hit in our house, especially with the toddler, and I imagine it would be great with coconut flour!
