I just recently jumped on the Coconut Oil Bandwagon. I have to admit that when Melody did her first coconut oil giveaway, I totally thought it was some sort of tropical tanning oil used for sunbathing. Once I figured out it was actually for cooking with, I bought my first jar at Trader Joes and did a quick search through Pinterest to find the recipes I wanted to use it in. I quickly used up the entire jar and I’m excited to get another jar to try some other uses- moisturizing dry skin, managing frizzy hair, etc.
Coconut oil has so many health benefits, I’ve heard of many people spreading it on toast, putting it into smoothies and eating it by the spoonful. Some of the health benefits:
- Promotes weight loss
- Protects against heart disease, cancer and diabetes
- Supports thyroid health
- Is an excellent antioxidant
- Antiviral
- Boosts energy
So, here are the recipes I’ve tried so far. My personal favorite is the double coconut muffins!

Where can you order coconut oil? You can pick it up from Vitacost for just $.28/ounce, which is just about the lowest price I’ve ever seen. If you have already used your $10 Vitacost credit, you can pick up Nutiva Organic Extra Virgin Coconut Oil for just $.49/ounce from Amazon. If you are a Costco shopper, I just recently learned that they sell the Nutiva Organic Coconut Oil for just $.28/ounce!
