Recipe from Bites: Mandarin Pasta Salad

This is one of my all-time favorite salads to bring to summer picnics, potlucks, showers, etc.  It’s sure to be a crowd pleaser!  The veggies are really flexible so add in whatever you have in your garden or farmers market (broccoli, carrots, radishes).

Ingredients:

For dressing, mix:

1 tsp. fresh ginger root (I use dried equivalent)
1 garlic clove, minced
1/3 cup rice vinegar
¼ cup orange juice
¼ cup vegetable oil
1 tsp. sesame oil
1 envelope Lipton Recipe Secrets Onion Soup Mix
2 teaspoons sugar

Toss together:

8 ounces bow tie pasta, cooked, drained and cooled
½ cucumber, chopped
½ cup red bell pepper, chopped
½ cup red onion, chopped
6 ounces fresh baby spinach leaves
1 can (11 ounces) mandarin oranges, drained
2 cups cooked chicken breast, cubed
½ cup sliced almonds

Directions:

Mix the dressing ingredients well and chill. When ready to serve, toss chilled salad ingredients with dressing, sprinkle on almonds and serve!
