Recipe from Bites: Spinach and Orzo Salad

by Jessie on February 2, 2012

I love bringing this dish to new moms and to potlucks. It always gets rave reviews.

Ingredients:

1/2 (16 ounce) package uncooked orzo pasta
1 (10 ounce) package baby spinach leaves, finely chopped
1/2 pound (about 1 c. ) crumbled feta cheese
1/2 red onion, finely chopped
3/4 cup pine nuts
1/2 teaspoon dried basil
1/4 teaspoon ground white pepper
1/2 cup olive oil
1/2 cup balsamic vinegar

Directions:

Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water. Transfer to a large bowl and stir in spinach, feta, onion, pine nuts, basil and white pepper. Toss with olive oil and balsamic vinegar. Refrigerate and serve cold.

Oh this looks amazing! I’m printing this out and putting in my recipe binder. I hope to make it the next time I pick up pine nuts! Thanks!

This looks amazing and packed with nutrients! Do you get your pine nuts in the WinCo bins?

Pine Nuts are a good price at Costco! Cheapest I’ve seen. And yesterday when I was there, it seemed like the price had gone down. I didn’t write it down but I think a big bag (I can’t remember how many ounces) is about $16.
