Recipe from Bites: Crockpot Chicken with Black Beans

Although this recipe is only #5 in top page views on my blog, this is the #1 recipe people tell me they make.  I mean, how many people are really making Dorito Casserole out there?  So, I always think of this as my most popular recipe.  I can’t think of an easier recipe and it’s very kid friendly!

4-5 boneless chicken breasts
1 (15 1/2 oz) can black beans, rinsed and drained
1 (15 oz) can corn, drained
1 (15 oz) jar salsa, any kind
1 (8 oz) package cream cheese

Direction:

Take 4-5 FROZEN boneless chicken breasts and put into crock pot.  Add black beans, salsa and corn.

Keep in crock pot on high for about 4-5 hours or until chicken is cooked.  (My crockpot is always super hot, so I actually just put it on “Keep Warm” and leave the chicken in for 6-7 hours)

Add package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.

Disclaimer from Melody: This is absolutely my number one favorite recipe on Bites.  It is so stinking easy, you don’t even have to remember to thaw anything the night before, just throw in the chicken breasts frozen.  We eat this on top of brown rice and wrap the leftovers in tortillas.  I have also taken this meal a few times to friends who just had babies.  SO EASY.  Make it tonight.
