Happy Father’s Day to all those fabulous daddies out there! My sweet husband requested Carne Asada Burritos for his Father’s Day lunch so I thought I’d share the recipe we had today. It’s a great recipe to start the grilling season off with!
I also like to serve the steak with Tex-Mex Fried Rice (shown in the picture).
1 ½ lbs flank steak
4 Tbsp white vinegar
6 Tbsp soy sauce
2 cloves garlic, minced
1 lime, juiced
¼ cup olive oil
1 tsp salt
1 or 2 tsp ground black pepper (depending on how spicy you want it)
1 tsp garlic powder
1 tsp chili powder
1 tsp dried oregano
1 tsp ground cumin
1 tsp paprika
Combine all ingredients except meat in large zip lock bag. Add meat and marinate at least 6 hours. Place the steak on a hot grill and grill for about 15 min, turning every 3-5min. Remove from grill and place on cutting board to rest for 5min. Thinly slice the steak, against the grain.
Today we put the meat in warm tortillas with guacamole, pico de gallo and cheese. Use meat to make, tacos, burritos, tostadas, quesadillas, whatever. Also, the leftover meat is very delicious just cold in a salad.
